Summary: "Adding value to tuna caught by domestic fishing vessels is increasingly popular in the Pacific. One way of doing this is to prepare quarter-loins for export, either chilled or frozen, to EU or US markets. This video - filmed during a training workshop in Fiji Islands in 1999 - demonstrates the loining method, known as the "hanging technique", used by most fish cutters in Tahiti, French Polynesia. An experienced fish cutter can get yields of 50 per cent from an albacore tuna and can complete the whole process in less than three minutes."
